When I gave a taste to my Husband, he said " You could of fooled me with that"
5 Cups diced, cubed Zucchini (Get rid of the seeds)
2/3 Cup Water
1/3 Cup Lemon Juice
3/4 Cup Sugar (I use xylitol)
1 to 2 teaspoons cinnamon
1/2-3/4 teaspoon salt
Simmer all ingredients until most of the water is gone. I put mine into a food processor and chopped it all up to resemble apple sauce.
