Cornbread Made With Xylitol Or Tagatose

Corn Bread

1 1/4 Cup Flour (I used 1/2 soy and 1/2 Buckwheat flour)
3/4 Cup Cornmeal
1/4 Cup Xylitol or tagatose
2 teaspoons baking powder
1/2 teaspoon salt (optional)
1 Cup milk (I used coconut milk)
1/4 Cup vegetable oil
2 Eggs beaten

Heat oven to 400* Grease and 8X8 Or 9X9 inch pan.

Combine dry ingredients.

Stir in milk, oil and beaten egg. Mix just until moistened

Whole Wheat Pie Crust



Whole Wheat Pie Crust

1 1/4 Cups Whole Wheat Flour (I used stone ground)
1/4 teaspoon Sea Salt
1/3 Cup Palm Shortening Or Real Butter
4-5 Tablespoons cold water







In food processor place flour, salt and shortening. Process until it is crumbs. Add water and process more.

Roll crust using more whole wheat flour. This is hard to roll, but just piece it together if you have to.

Bake at 400* 12-15 minutes or until golden brown.

Pumpkin Pie Recipe Using Xylitol

This was YUM!!   I have missed pumpkin pie up until now...

Pumpkin Pie Using Xylitol
  • 1 (9 inch) unbaked deep dish pie crust
  • 3/4 cup xylitol
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 2 eggs
  • 1 (15 ounce) can Pumpkin
  • 1 (12 fluid ounce) can Evaporated Milk

Directions

  1. Preheat oven to 425 degrees F.
  2. Combine sugar, salt, cinnamon, ginger and cloves in small bowl. Beat eggs lightly in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk. Pour into pie shell.
  3. Bake for 15 minutes. Reduce temperature to 350 degrees F.; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. (Do not freeze as this will cause the crust to separate from the filling.)

Make Your Own Cranberry Sauce

I love the fact that I can make my own cranberry sauce and use Xylitol in place of sugar. This turned out so yummy that I will always make my own, now that I see how easy it is.

I made my cranberry sauce thick by using 1/2 the water called for.


Cranberry Sauce (You will find this recipe on your bag of fresh cranberries)

12 ounces fresh cranberries
1 cup water
1 cup sugar (I used xylitol)

Wash and drain cranberries. Put everything into a sauce pan and simmer for about 10 minutes.
I took a potato masher and mashed my berries up a little bit..

Cherry Pepper Sauce ~ Great For Subs

How To Make Cherry Pepper Sauce

(This is so easy)

Process the peppers in a food processor to the size you want them.

Put them in a jar and let them set a few days in the fridg. 

Thats it! Spread them on your sub, sandwich, Hamburger, hot dog. Hubs uses his sauce on most anything.
 
 A lady that works at Sub Shop in Atlantic City told my Hubs how to make this.   He just loves it and uses it by the shovel full.

Make Your Own Hot Pepper ~ 5 Pepper Medley

Awhile back, I posted how to Make Your Own Crushed Red Pepper Bam!!  Hubs loved it, but it was so hot that he could not use much of it.   Soooo....  This year I have decided to make a 5 pepper medley.



We have Hot banana peppers, chili pepppers, cherry pepppers, habanaro peppers and jalapeno peppers.   Plus, I snuck in a ghost pepper or two.




I chop the peppers in my food chopper to make it so much easier 












I then pile the peppers on an alunimun foil covered cookie sheet and put them in the oven to dry.   I usually dry them anywhere at 200* to 225*.   When I am in a hurry, I turn the oven up.











 Here they are drying in the oven. 











So now that I have them all dried, I now grind them further in a coffee grinder that I bought just special to grind peppers.    You would not want to grind coffee after grinding hot pepers.... Can you imagine if you tried to drink it.  That would be one spicy cup of coffee.

This is what they look like after the coffee grinder.  you can grind them coarse of fine.   I did some of both but the Hubs seems to use the fine ground more so I will probably regrind the coarse.


I am not finished yet.  I try to use every part of the pepper there is.

The top of the pepper I put into my juicer to make pepper juice. 
  



We didn't get much liquid,  but to preserve the juice, we put a little bit of vinegar in, boiled it for about 10 minutes, then put it in a jar in the refridgerator.

Now for the stems!!
I put all my junk vegetables into a container and at the end of the day, I bury it in my garden for compost.

Tomato Pie Revised

I have been wanting to try Tomato Pie, but a healthier version than what you normally find.   Most recipes are not at all even a little alkaline with all the cheese they use. 

Tomato Pie
1/2  Recipe For Whole Wheat Pie Crust
2 to 3 Large Tomatoes
Fresh Basil
Fresh Garlic
Sprinkling of salt
Just a little mozzarella cheese




Peel and slice tomatoes then drain on a paper towel.
Layer Tomatoes into the prepared pie crust
Sprinkle Tomatoes with a little salt, the garlic and cut basil.
Top with just a sprinkling of mozarella cheese

Bake at 400* for 25 to 30 Minutes


This is my Husband version of Tomato Pie.  I used the other half of the pie crust for his.
Lots of Cheese and it also has mayonnaise in it.

I can tell you, his sure did smell good cooking, much better than mine did, but hey!!  Mine is healthier so I am happy.


To make the unhealthy version, do everything I did above except the Mozarella cheese....  mix together

1 Cup Mayonnaise
1 Cup Sharp Cheddar Cheese
1/2 Cup cooked bacon
Spoon the above mixture on top the tomatoes
Bake at 400* for 25 to 30 Minutes
